I’m Hungry Today!

Well today’s been a great day, but I have been so hungry ALL DAY LONG!  In fact, I woke up starving.  Augghh.

Not good.

I think I’m hormonal or something.

Joy.

I’ve still been eating well, but I’ve been snackin’ a ton! 🙂

I was craving cereal for breakfast, so this is what I came up with…

A bowl of Uncle Sam mixed with Kashi Go Lean Crunch topped with blueberries (yum!) and a side of 4 egg whites + low sugar ketchup.

I usually just eat Kashi Go Lean (not Crunch) because the Crunch kind has a lot more sugar (12 grams!), but it tasted so good today.  It’s still a lot healthier than most cereals because it’s high in protein and fiber and full of “real” ingredients!  I love blueberries too.  I need to go buy some more!

Later on I had this for a snack

Raspberry Chobani yogurt (love!) and 1 Chocolate Coconut Chia Protein Ball (my 4 your old snagged the other one!)

Then I ran to Walmart and the library with my cute little kiddos.  For whatever reason I decided to buy a can of Salt and Vinegar Pringles.

Ya.

They are really good and I never ever eat them….so I decided to!  I think it might have something to do with my whole  “treat deprivation and hormonal stuff” goin’ on.  They were very good I must say though.

I also got some awesome reading material at the library…

Oxygen and Fitness Magazines!

I love both of these magazines!  Although I have to hide them from the kids because of the amazingly fit, albeit half naked cover models!  LOL.

I really love reading about health and fitness.  It keeps me motivated and gives me a lot of great ideas!  Yay.

This is what I had for lunch

A grilled turkey hotdog (leftover from dinner last night) topped with mustard and served with a side of sweet potato and salad!

K, I’m sorry that picture looks a little scary (my mustard was almost gone).  I have to admit I kind of like hot dogs.  I think they’re yummy.

Ya, I’m serious.

I know they’re “Mystery Meatish”, but I do try to buy better quality ones.  This is the kind I had…

Rather tasty.  And, in case you were wondering, this is what we had for dinner last night…

Hamburgers (same recipe as my turkey burgers) with sweet potatoes and Greek salad. YUM!

We also grilled hotdogs (hence, my lunch leftovers!)  I love this meal and I’m sure we’ll be having it a lot more often now that we’ve started grilling again.  Yay.

Later on, I had this for a snack

Light Cottage Cheese with carrots (love these itty bitty ones!), red pepper strips and Kashi Pita Crisps. Love this.

K, and I just took a quick break from typing this post because…….I was HUNGRY!

It’s kind of starting to bug. 😦

I just had a bowl of cereal (Crispix mixed with Kashi Go Lean).  Yummy.

I’m going to a fun 5th Grade Maturation Clinic with my daughter in just a minute.

She’s so excited. LOL.

I have dinner in the oven for Kev and the boys.  I made a Hamburger and Potato Casserole per Kev’s request.  It’s his mom’s recipe and it’s one of his favs.  It’s not ultra healthy though.

Anyway despite being the hungry lady that I am, the casserole deal is not calling my name.  So, that’s why I just had the BIG bowl of cereal.

When I get back tonight, I think I’ll round off my day with a protein shake of some sort.

Sounds good.

So, although I’ve been a little piglet today……….I’m not eating treats!

Very cool.

I did, however crave treats SEVERAL times today.

Ya, I AM hormonal!  Geesh.

But, this little “treat” is the bomb and it squashed my treat cravings.

A small spoonful (1/2 Tbsp) of White Chocolate Wonderful Peanut Butter! I LOVE THIS STUFF SO MUCH! It's all natural too. Wahoo.

Well, that’s my day today.  So exciting, I know.

I Love Healthy Food!

Well, I’ve been lovin’ this whole “healthy challenge” thing.  Yay.

It’s really helped me to get back on track.  The only thing I really have to do to stick with my healthy challenge is not eat treats and get 7 hours+ of sleep a night.

So far, so good.

However, what I really love about this healthy challenge is it makes me want to be healthy in all aspects of my life!  It makes me want to eat better in general and stick to my exercise plan.  I love it.  It’s nice to have a little support system too.  It really motivates me and I’m so glad I’m doing it.

I gotta say even though my original goal for the challenge is to not eat treats 6 days a week, I’m going to try to go as long as I can without having treats.

It scares me to say that out loud. 🙂  It will be tough, I know.

Treats really seem to sabotage my health efforts, so I’m going to avoid them as long as I can.  In the meantime, I have a lot of healthy “treats” that I love and I’m going to call on them as needed!

I thought I’d update y’all on my workouts over the past few days:

Monday.

I went to my fav Bootcamp class at the gym.  It kicked my can!  I only exercised once last week (because I was so sick!) and I’m really feeling it this week!  Holy cow!  I’ve been very sore, but I love it.

Tuesday.

I went on a 4 mile run in the morning!  Yay!  I love morning runs, but I usually don’t sacrifice my sleep for them.  However, we had a crazy day planned so I knew if I didn’t go in the morning, it just wouldn’t happen.  I was so glad I went.  It was tough and I didn’t feel super strong, but I did it.  Check.

Today.

I went to my Muscle Works class at the gym.  It was very tough and I still didn’t feel super strong, but I loved it.

Ya know, I think my body is still recovering from being so sick last week.  I feel fine, but my stamina is lacking.  It’s a little frustrating, but I’m hoping it will be short lived.  I’ve been doin’ well in the sleep department, which is helping though.

Here’s an update of some of the things I’ve been eating lately as well…

Monday.
Breakfast.

1 egg + 3 egg whites with spinach, peppers and onions topped with salsa and served with a side of low-carb pan fried toast. Yum!

I usually have just 4 egg whites, but I decided to have one whole egg this time.  It tasted extra yummy and seemed more  fluffy and flavorful.  I’m guessin’ the little yolk in there did the trick!

Oh, and I saw that little Plankton Squinky (from Spongebob) on the counter and decided he wanted to be in the picture too!

Lunch.

I went to lunch at the Dodo Restaurant with some friends.  It was very yummy!  I’m going to do a separate post about that later. 😉

Snack.

Before I went to the gym, I made a yummy protein shake (there’s Plankton again too!)

1 C. Almond Milk, 1 scoop Chocolate Protein, 1/2 T. Chia Seeds, almond extract, 2 big handfuls of spinach and ice!

Dinner.

I made some of my favorite Pear and Feta Cheese Flatbreads!  I really love them so much!!  This time I decided to try it on a Flatout.

Love these things….100 calories, 8 g. fiber, 9 g. protein and yummy!! Awesome!

I served it with a side of fruit. Loved this so much and I was stuffed!

Oh, and the first time I made this I had a hard time finding the arugula.  Since then, I’ve seen it everywhere!  I just bought some at Macey’s the other day and I just saw some at Smiths today!

I made the kids little pizzas on English Muffins for dinner.  They loved them and they were super easy!

This pic looks a little gross, but they were good!

Tuesday.
Breakfast.

Before I went on my run, I had a half a banana with peanut butter (no pic, sorry).  I really love bananas w/ peanut butter!  Yum!

After my run, I made a yummy protein shake and had the other half of my banana.  Sometimes, I mix the banana into the protein shake….but I wanted to eat it this time!

1 C. Almond Milk, 1 scoop Chocolate Protein, 1 T. flax, 1 T. Natural Peanut Butter, almond extract, 2 big handfuls spinach and ice!

Snack.

I ran a bunch of errands with my little kiddos, so I grabbed some snacks to take with us!

My kids love protein balls and kept asking for more!  I love them too!

Lunch.

For lunch I had the leftovers from my lunch at the Dodo.  Yum.

Snack.

The salad was awesome, but it didn’t keep me full for too long.  So I had this…(Plankton was still hangin’ around!)

A slice of Ezekiel bread, toasted and topped with Dark Chocolate Dreams Peanut Butter, bananas, agave and chia seeds! Love this!

Dinner.

We had a crazy day and I felt like I hadn’t seen Kev in about 12 years, sooooo we got Chick-Fil-A for the kids (I stole a few fries!) and Kev and I went out and got some Chinese food.  I seriously OD’d and was stuffed, but it was fun!

Well, that’s the 411 for the past couple of days.  I haven’t been a good picture takin’ lady today but I’ve eaten pretty much more of the same.

Peanut Butter Protein Balls

Oh my goodness, I just discovered a very awesome, yummy recipe!!!  It’s posted on Oxygen Magazine’s website (they have so many awesome recipes!!) and I thought I would share it with all of you!!!

These are fast, easy, healthy and an awesome pre or post workout snack!

Love it!

I’m going to a killer cardio class at the gym tomorrow morning and I plan to eat two of these on the drive there.  They will give me the energy I need without making me want to hurl.  Yay!

Peanut Butter Protein Balls

1/3 cup natural peanut butter
1/4 cup honey
1 scoop chocolate whey protein powder
3 tbsp ground flaxseed
3 tbsp dark chocolate chips

Mix together all ingredients.  It should be the consistency of Play-Doh.

Roll into 14 small balls (I made 15.)

Refrigerate to firm them up, overnight for best results.

Enjoy!
